SLOW COOKER ROOT VEGETABLES

1 large bag carrots

4 parsnips 

3 sweet potatoes

1-2 cup bone broth or vegetable broth 

½ tablespoon thyme 

Salt and pepper to taste

1 cup pecans 

1/2 cup cranberries

Tahini dressing:

1 cup tahini dressing

4 tablespoons nutritional yeast

1 lemon juiced

3 tablespoons ACV

3 tablespoons olive oil

1 cup water 

1 clove garlic 

½ teaspoon salt

Pepper 

Directions: 

1. Place vegetables, seasoning and broth in 10 QT Crock-Pot Express Easy Steam Release Pressure Cooker and cook 4 hours or until fork tender

2. In the meantime, blend all of the dressing ingredients together in a blender until creamy. Adding more water as needed, to thin out.

3. Once veggies are done cooking, top with cranberries and pecans then drizzle dressing on top.
