VEGETARIAN GLUTEN-FREE STUFFING

I left the flavors to meld together for hours while I carried on with the rest of our thanksgiving prep 😉👌🏼✨What is your favorite holiday dish?

Ingredients:
•2  onions, chopped
•6 celery stalks, chopped
•4 sweet potatoes, peeled and diced
•1 cup diced butternut squash
•2 apples, chopped
•2 sprigs fresh rosemary, leaves chopped
•1 teaspoon thyme
•1  tablespoon sage
•1   teaspoon  salt and pepper (or to
•10 cups toasted gluten-free bread cubes
•3 cups vegetable stock or bone broth if not vegetarian
•1 tablespoon olive oil

Directions:
1.In a large pan sautée onions, celery and apple in olive oil until onion is translucent.
2.Transfer to Crockpot and mix in the spices, as well as the remaining ingredients. Toss to combine. Cover.
3.Cook on HIGH heat for 45 minutes to an hour, then reduce heat to Low, and cook for 4 to 8 hours. Enjoy
