HEALTHY EXPRESS BAKED CARAMEL APPLES

•Date caramel sauce:

2 cups pitted medjool dates

1 can coconut milk

1 teaspoon vanilla

Tiny pinch sea salt (optional)

Directions:

1. Place all ingredients in Crock-Pot 10 QT Express Crock Pressure Cooker

2. Press DESSERT setting. Cook 15 minutes.

3. Allow natural release. 

4. Blend with an immersion blender or regular blender. Store in an airtight container in the fridge.

•Express Baked Apples:

7-10 apples (I used HoneyCrisp and Gala apples)

1 cup water

1 tablespoon cinnamon

Directions: 

1. Wash and core apples. Using a cookie scoop or spoon scoop out some of the inside of the apple. Leaving ½ inch at the bottom so the caramel does not fall out.

2. Place a rack inside Crock-Pot 10 QT Express Crock Pressure Cooker. Then pour water on the bottom. 

3. Place apples on top of the rack — make sure they’re not submerged in water. 

4. Sprinkle cinnamon over the top.

5. Use the Express DESSERT function. Cook 5 minutes. Allow manual pressure release. 

6. Remove apples and fill with date caramel sauce then top with Paleo granola. Optional, and highly recommended drizzle maple syrup over the top. Enjoy!
